Late lunch = Spinach salad with carrots and sunflower seeds
Late dinner = Smashed potatoes with butter and parsley, Teriyaki soba noodles with broccoli, carrots, mushrooms, green onions, siracha, garlic chili sauce, then I sauteed zucchini and squash in EVOO, pepper and garlic powder
Late snack = pumpkin seeds
Any chance I can get the recipe for the teriyaki soba noodles?
ReplyDeleteAbsolutely! They are my favorite! I buy the teriyaki soba noodles in a package that are in the vegan section of the produce section in a grocery store. You get the package of noodles, puncture holes, microwave them for 1 minute to loosen them up. Meanwhile, in a large high sided pan heat up 2 tbsp oil on med/med high. Add in whatever veggies you want (I always do mushrooms, broccoli, carrots, onions). Cook for about 4 - 5 minutes. Add in noodles, water (it will say how much on package, I think it's 3/4 cut) and sauce packet. I also add in extra teriyaki sauce, garlic chili sauce and Siracha. I like it hot! Stir frequently and cook for about another 5 minutes. Enjoy! :)
