Roasted Parmesan Potatoes Heat oven to 400. Cut potatoes in half lengthwise, drizzle w EVOO, turn upside down so flat side is facing down. Put in oven for 50 minutes. Take out of oven, turn so flat side is up. Sprinkle on Parmesan cheese and paprika - bake for another 10 minutes
A loaf of French Bread (pre-sliced), butter, parmesan cheese, parsley Heat oven to 350 Put butter on bread, sprinkle w parmesan cheese and parsley Bake for 10 minutes or until cheese has melted

Breakfast Potatoes

Vegetable Oil - 1/4 cup (enough to cover the bottom of the skillet)
6-8 red potatoes
Half an onion - diced
3 cloves of garlic - minced
1 tbsp fresh ground black pepper
1 tsp sea salt
2 tsp garlic salt
2 tbsp red pepper flakes (I like mine spicy)
1 tbsp parsley flakes
1 tsp chili powder
1 tsp cayenne powder

Heat veg oil on med heat - add potatoes and all ingredients - cover
Stir every 5 minutes
Cook about 20 minutes or until potatoes are cooked through

Jenna's noodles

I have posted this recipe before, but it's so good so I'm doing it again! :)

Thin spaghetti noodles
Half an onion
3 cloves of garlic - cut into chips
mushrooms
broccoli - cut into florets
teriyaki sauce - 1/4 cup
chili garlic sauce - 2 tbsp
Fresh ground black pepper - 1 tsp
evoo - 2 tbsp
sea salt - 1 tbsp

Boil water - add sea salt
Cook spaghetti noodles according to package (usually 7 minutes)
While the noodles are cooking, heat the evoo on medium heat. Sautee garlic, onions, mushrooms and broccoli.
After 5 minutes, add in the teriyaki sauce, chili garlic sauce and black pepper

When the noodles are done cooking, drain the water then add to veggie mixture - cook until combined (a few more minutes)



White Skinned Sweet Potatoes

White Skinned Sweet Potatoes, Coconut Oil, Cinnamon

Preheat oven to 400 degrees
Scrub sweet potatoes - cut into thin rounds
Place sweet potatoes on baking sheet
Put little drops of coconut oil all over sweet potatoes
Sprinkle with cinnamon
Bake for 30-40 minutes depending on how cooked you want the potatoes (I like mine crispy)

WOW!

Wow - time sure does fly! I can't believe it's been over 4 months since I've blogged! :)

I'm going to start blogging what I eat again (will help me stay on track) and I will also be posting some recipes!

Here was yesterday:




Oatmeal with hot water, cinnamon, sliced almonds, Craisins and wheat germ


Leftover rigatoni & garlic bread for lunch


Pear for afternoon snack & a half cup of coffee


Breakfast for dinner! I do this once a week. I had leftover bread to use up from pasta night - so I made cinnamon toast with this instead of regular bread. So good!

My thoughts - this is so true, and I need to start working on my portion control again.
