Baked Southwestern Egg Rolls

Jenna's Granola Recipe! :)
Here's my recipe - I tweaked a version from Skinny Bitch in the Kitchen! :)
2 cups rolled oats
1/4 cup 100% pure maple syrup
4 tablespoons safflower oil (plus more for greasing baking sheet)
3 cups fried fruit (I choose golden raisins, cranberries and chopped apricots)
1/2 cup chopped walnuts
1/2 cup pepitas (mexican pumpkin seeds)
Preheat over to 300
Arrange the oats on a large rimmed baking sheet and bake, stirring occasionally, until lightly toasted, about 15 minutes. (I stirred every 5 minutes)
Meanwhile, in a large bowl, whisk the maple syrup and Safflower oil.
Stir the toasted oats into the syrup mixture, add in the walnuts stirring to thoroughly combine.
Grease the baking sheet w safflower oil on a paper towel. Spread the granola evenly on the sheet and bake, stirring occasionally, until golden brown, about 20 minutes (the mixture will still look and feel wet). Stir in the dried fruit, then cool completely in the pan on a wire rack!
Store in air tight container!
