We went tubing at Tarryall, CO. Then on Sunday I went 4 wheeling up at Rampart!

Thursday - breakfast for dinner

We made breakfast for dinner. Scrambled eggs, chorizo, and red potatoes grated into an electric skillet, with tomatoes, habinero peppers, green bell peppers and seasonings.

We made pork chops, mashed red potatoes and green bell peppers, zucchini and tomatoes in EVOO and seasoning. I backed cinnamon streusel muffins for dessert.

Monday

I made shells stuffed with ground beef for dinner, as well as grilled zucchini in Italian dressing. I attempted to make zucchini bread for the first time ever and it was SO good!
